For the Rice:- 2 cups basmati rice
- 4 cups water
- 2 bay leaves
- 1 cinnamon stick
- 4 cardamom pods
- 1 tsp salt
- 2 lbs chicken thighs, boneless and skinless
- 1 tbsp ginger, minced
- 1 tbsp garlic, minced
- 1 tbsp chili powder
- 1 tsp turmeric powder
- 1 tsp salt
- 1 cup plain yogurt
- 1 cup fried onions
- 1/4 cup cashews, chopped
- 1/4 cup raisins
- 1/4 cup fresh cilantro, chopped

Method
For the Rice: 1. Rinse the rice in cold water until the water runs clear. 2. In a large pot, bring 4 cups of water to a boil. 3. Add the rice, bay leaves, cinnamon stick, cardamom pods, and salt to the pot. 4. Stir the rice and bring it to a boil again. 5. Cover the pot with a lid and reduce the heat to low. 6. Simmer the rice for 20 minutes. 7. Turn off the heat and let the rice sit for an additional 10 minutes. 8. Remove the lid and fluff the rice with a fork. For the Chicken: 1. Cut the chicken into bite-sized pieces. 2. In a medium pot, heat some oil over medium-high heat. 3. Add the ginger, garlic, chili powder, turmeric powder, and salt to the pot. 4. Cook the spices for 1-2 minutes. 5. Add the chicken to the pot and stir to coat it in the spices. 6. Cook the chicken for 8-10 minutes, or until it is cooked through. 7. Remove the pot from the heat and add the yogurt. 8. Stir to combine. To Assemble: 1. In a frying pan, heat some oil over medium heat. 2. Add the cashews and raisins to the pan. 3. Cook the cashews and raisins for 2-3 minutes, or until they are golden brown. 4. Add the fried onions to the pan and stir to combine. 5. In a large serving dish, spread half of the rice in an even layer. 6. Add the chicken on top of the rice. 7. Cover the chicken with the remaining rice. 8. Sprinkle the cashews, raisins, fried onions, and cilantro on top of the rice.Notes
