Ingredients

For this recipe, you will need the following ingredients:
  • 1 cup uncooked long-grain white rice
  • 2 cups water
  • 4 boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 thin slices of ham
  • 4 slices of Swiss cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs

Equipment

You will need the following equipment for this recipe:
  • 9x13 inch baking dish
  • Medium saucepan
  • Large skillet

Method

1. Preheat your oven to 375 degrees Fahrenheit. 2. In a medium saucepan, bring the water to a boil. Add the rice and stir. Reduce the heat to low, cover the saucepan, and simmer for 18-20 minutes or until the rice is fully cooked. 3. While the rice is cooking, season the chicken breasts with salt and pepper. In a large skillet, cook the chicken over medium-high heat for 6-7 minutes on each side, or until the chicken is fully cooked. Remove from the skillet and set aside. 4. In the same skillet, add the ham slices and cook for 1-2 minutes on each side, or until the ham is lightly browned. Remove from the skillet and set aside. 5. In the same skillet, melt the butter over medium heat. Add the flour and whisk until smooth. Gradually add the milk, whisking constantly, until the mixture thickens. 6. Stir in the Parmesan cheese until it is fully melted and combined. Remove from the heat. 7. Spread the cooked rice in the bottom of the baking dish. Place the chicken on top of the rice, followed by the ham slices. Lay the Swiss cheese slices on top of the ham. 8. Pour the cheese sauce over the chicken and ham. 9. Sprinkle the breadcrumbs over the top of the cheese sauce. 10. Bake for 20-25 minutes, or until the casserole is heated through and the breadcrumbs are golden brown.
