- 1 can diced tomatoes
- 2 cups chicken broth

Method
- Heat the oil in a large pot over medium heat.

- Add the black beans, diced tomatoes, chicken broth, salt, and pepper to the pot.

- Reduce the heat to low, cover the pot with a lid, and simmer for 20-25 minutes, until the rice is tender and the liquid has been absorbed.
- Fluff the rice with a fork and serve hot.
Notes
