- 2 tbsp of Oil
- Salt to taste
- Coriander Leaves, for garnish

Method
Follow these simple steps to prepare Kerala style chicken fried rice:- Wash the rice in water and soak it for 30 minutes.
- Heat oil in a large saucepan and add chopped onions, garlic, and ginger. Saute until the onions turn translucent.
- Add sliced chicken pieces and cook until the chicken turns golden brown.
- Add chopped carrots and capsicum and saute for 2-3 minutes.
