- 1 tsp of chana dal
- 1 sprig of curry leaves
- 2 green chillies, chopped
- 1 onion, chopped
- 1 tsp of ginger-garlic paste
- 1 tsp of turmeric powder
- 1 tsp of red chilli powder
- 1 tsp of coriander powder
- Salt to taste
- A handful of chopped coriander leaves
Equipment
- A wok or a deep frying pan
- A spatula
- A knife
- A cutting board
Method
- Heat the oil in a wok or a deep frying pan.
- Add the mustard seeds, cumin seeds, urad dal, chana dal, and curry leaves. Fry them until the mustard seeds start to pop.
- Add the chopped green chillies and onion. Fry them until the onion turns translucent.
- Add the ginger-garlic paste and fry for a minute.
- Add the finely chopped mixed vegetables and fry for 5 minutes on medium heat.
- Add the turmeric powder, red chilli powder, coriander powder, and salt to taste. Mix well.
- Add the cooked rice to the wok and mix well with the vegetables and spices.
- Garnish with chopped coriander leaves.
- Serve hot.
Notes
