- 6 bell peppers
- 1 lb. ground chicken
- 1 cup cooked rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. paprika
- 2 tbsp. olive oil
- 1 cup tomato sauce
- 1 cup shredded mozzarella cheese

- Frying pan
- Knife
- Cutting board

Method
- Preheat oven to 375°F.
- Cut off the tops of the bell peppers and remove the seeds and membranes. Set aside.
- In a frying pan, heat olive oil over medium heat. Add onion and garlic and cook until onion is translucent.
- Add ground chicken to the frying pan and cook until browned. Add zucchini and red bell pepper and cook until vegetables are tender.
- Add cooked rice, salt, black pepper, and paprika to the frying pan and mix well.
- Stuff the bell peppers with the chicken and rice mixture.
- Place the stuffed bell peppers in a baking dish and pour tomato sauce over the top.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil, sprinkle shredded mozzarella cheese over the top of the bell peppers and bake uncovered for another 15 minutes or until cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
Notes
