Ingredients

For the chicken:
  • 1 whole chicken, cut into pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
For the rice:
  • 2 cups jasmine rice, rinsed
  • 3 cups chicken broth
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
For the chilli sauce:
  • 10 red chillies, seeded and chopped
  • 3 cloves garlic, minced
  • 3 tablespoons ginger, minced
  • 2 tablespoons vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

Equipment

  • Large pot or Dutch oven
  • Small saucepan
  • Cutting board and knife
  • Measuring cups and spoons

Method

1. In a large pot, heat the sesame oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5 minutes. Remove the chicken from the pot and set aside. 2. In the same pot, add the garlic and cook for 1-2 minutes until fragrant. Add the rice and stir to coat in the oil and garlic. Add the chicken broth, salt, and ginger, and bring to a boil. 3. Reduce the heat to low and cover the pot. Cook for 18-20 minutes, or until the rice is tender and the liquid has been absorbed. 4. While the rice is cooking, make the chilli sauce. In a small saucepan, combine the chillies, garlic, ginger, vinegar, sugar, and salt. Bring to a boil and then reduce the heat to low. Simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened. 5. Once the rice is cooked, remove it from the heat and let it sit for 5 minutes. Fluff the rice with a fork and then arrange the chicken pieces on top. 6. Serve the chicken rice with the chilli sauce on the side.

Notes

To make this recipe even easier, you can use a store-bought chilli sauce instead of making your own.
