Method

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.

  6. Add the cooked rice to the skillet and stir to combine with the vegetables and spices.
  7. Push the rice to one side of the skillet and add the beaten eggs to the other side.
  8. Scramble the eggs until cooked through, about 2-3 minutes.
  9. Stir the scrambled eggs into the rice mixture.
  10. Add the cooked chicken back to the skillet and stir to combine with the rice mixture.
  11. Stir in the chopped cilantro.
  12. Serve hot and enjoy!
