Method

1. Rinse the rice in a fine-mesh sieve until the water runs clear. 2. In a large pot, heat the vegetable oil over medium heat. 3. Add the cumin seeds and let them sizzle for a few seconds. 4. Add the chopped onions and minced garlic, and sauté until the onions become translucent. 5. Add the grated carrots and sauté for a few minutes until they are tender. 6. Add the coriander powder, turmeric powder, and salt, and stir to combine. 7. Add the rice to the pot and stir to coat it with the spices. 8. Add the water and bring it to a boil. 9. Once the water is boiling, reduce the heat to low and cover the pot with a lid. 10. Cook the rice for 20-25 minutes, or until the water has been absorbed and the rice is tender. 11. Fluff the rice with a fork and serve.
