Method

  1. Heat the olive oil in a large skillet over medium-high heat.

  3. Add the onion, red bell pepper, green bell pepper, jalapeno pepper (if using), and garlic. Cook for 5-7 minutes, until the vegetables are tender.
  4. Add the chili powder, ground cumin, salt, and black pepper. Stir to combine.
  5. Add the black beans, corn, and salsa. Stir to combine and cook for another 2-3 minutes, until heated through.
  6. Warm the tortillas in the microwave for 10-15 seconds or in a dry skillet over medium heat for 10-15 seconds on each side.
  7. Place a tortilla on a plate and spoon some of the beef mixture down the center of the tortilla.
  8. Sprinkle some shredded cheese and chopped cilantro over the beef mixture.
  9. Roll up the burrito by folding the sides in and then rolling it up from the bottom.
  10. Repeat with the remaining tortillas and beef mixture.
  11. Serve immediately.

You can customize this recipe by adding or subtracting ingredients to your liking. If you don't like beef, you can use ground turkey or chicken instead. You can also add some diced tomatoes or avocado to the filling for extra flavor.
