- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1/2 cup salsa
- 8-10 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/4 cup chopped cilantro

Method
- Heat the olive oil in a large skillet over medium-high heat.
- Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks.
- Add the onion, red bell pepper, green bell pepper, jalapeno pepper (if using), and garlic. Cook for 5-7 minutes, until the vegetables are tender.
- Add the chili powder, ground cumin, salt, and black pepper. Stir to combine.
- Add the black beans, corn, and salsa. Stir to combine and cook for another 2-3 minutes, until heated through.
- Warm the tortillas in the microwave for 10-15 seconds or in a dry skillet over medium heat for 10-15 seconds on each side.
- Place a tortilla on a plate and spoon some of the beef mixture down the center of the tortilla.
- Sprinkle some shredded cheese and chopped cilantro over the beef mixture.
- Roll up the burrito by folding the sides in and then rolling it up from the bottom.
- Repeat with the remaining tortillas and beef mixture.
- Serve immediately.
