Method
- In a mixing bowl, beat together the peanut butter, softened butter, and vanilla extract until smooth.
- Add the powdered sugar a little at a time, beating well after each addition. The mixture should be thick and crumbly.
- Add the Rice Krispies cereal and mix until well combined.
- Line a baking sheet with parchment paper. Roll the mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
- Place the baking sheet in the refrigerator for about 30 minutes to firm up the balls.
- In a microwave-safe bowl, melt the chocolate chips and vegetable shortening together in the microwave, stirring every 30 seconds until smooth.
- Remove the balls from the refrigerator and insert a toothpick into each one.
- Dip each ball into the melted chocolate, leaving a small circle at the top uncovered to resemble a buckeye nut. Use a spoon to help coat the balls evenly with chocolate.
- Place the chocolate-coated balls back onto the parchment paper and remove the toothpicks. Let them cool and harden at room temperature for about 30 minutes.
- Store the buckeyes in an airtight container in the refrigerator.
Notes
