Description
Tabbouleh is a traditional Middle Eastern salad made with fresh herbs, vegetables, and bulgur wheat. In this recipe, we're swapping out the wheat for brown rice to make it gluten-free. - 1 cup uncooked brown rice
- 1/2 cup finely chopped fresh parsley
- 1/4 cup finely chopped fresh mint
- 1/2 cup finely chopped cucumber
- 1/2 cup finely chopped cherry tomatoes
- 1/4 cup finely chopped red onion
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- Large pot with lid
- Sharp knife
- Cutting board
- Large mixing bowl
- Measuring cups and spoons
Method
- Rinse the brown rice in a fine mesh strainer and add it to a large pot with 2 cups of water.
- Bring the rice to a boil over high heat, then reduce the heat to low and cover the pot with a tight-fitting lid.
- Simmer the rice for 35-40 minutes, or until tender and all of the water has been absorbed.
- Remove the pot from the heat and let the rice cool to room temperature.
- While the rice is cooking, prepare the rest of the ingredients.
- In a large mixing bowl, combine the chopped parsley, mint, cucumber, cherry tomatoes, and red onion.
- In a small mixing bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
- Add the cooled brown rice to the large mixing bowl with the vegetables and herbs.
- Pour the dressing over the top and toss everything together until well combined.
- Adjust seasoning to taste and serve chilled or at room temperature.
Notes
This recipe can be easily customized to your liking. Feel free to add or subtract ingredients as you see fit. Some other great additions could be diced avocado, crumbled feta cheese, or sliced olives.Nutrition Info
