Ingredients

For the chicken:
  • 4 boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the rice:
  • 1 cup long-grain white rice
  • 1 3/4 cups chicken broth
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the white sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1 tablespoon white vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the hot sauce:
  • 1/4 cup sriracha sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Equipment

  • Grill or grill pan
  • Medium saucepan
  • Small mixing bowls
  • Whisk

Method

1. In a small bowl, mix together the olive oil, paprika, cumin, garlic powder, onion powder, salt and black pepper. Rub the mixture all over the chicken thighs and let them marinate in the refrigerator for at least 30 minutes. 2. Preheat the grill or grill pan to medium-high heat. Grill the chicken thighs for about 5-6 minutes per side or until they are cooked through. 3. While the chicken is grilling, prepare the rice. In a medium saucepan, bring the chicken broth to a boil. Add the rice, cilantro, butter, salt, and black pepper. Stir well, then reduce the heat to low and cover the pan. Let the rice simmer for about 18-20 minutes or until all of the liquid has been absorbed. 4. To make the white sauce, whisk together the mayonnaise, yogurt, white vinegar, sugar, salt, and black pepper in a small bowl. Set aside. 5. To make the hot sauce, whisk together the sriracha sauce, rice vinegar, sugar, salt, and black pepper in another small bowl. Set aside. 6. Once the chicken and rice are cooked, it's time to assemble the dish. Spoon a generous amount of rice onto a plate, then place a chicken thigh on top. Drizzle the white sauce and hot sauce over the chicken and rice. Serve immediately.
