- 1 pound ground beef
- 1 pound ground pork
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 tablespoon dried thyme
- 1 tablespoon dried oregano
- 1 tablespoon smoked paprika
- 1 teaspoon cayenne pepper
- 2 cups chicken broth
- 1 cup long-grain rice
- Salt and pepper, to taste
- Green onions, chopped (for garnish)

- Large skillet
- Cooking spoon or spatula
- Measuring cups and spoons

Method
- Heat a large skillet over medium-high heat. Add the ground beef and pork and cook, breaking up the meat with a spoon or spatula, until browned and cooked through.
- Add the onion, green bell pepper, celery, and garlic to the skillet and cook until the vegetables are tender, about 5 minutes.
- Stir in the thyme, oregano, smoked paprika, and cayenne pepper and cook for another 2 minutes.
- Add the chicken broth and rice to the skillet and stir to combine. Bring to a boil, then reduce the heat to low and cover the skillet with a lid.
- Cook for 20-25 minutes, or until the rice is tender and has absorbed all of the liquid.
- Season the dirty rice with salt and pepper, to taste.
- Garnish with chopped green onions and serve.
