  • 2 tablespoons butter, melted

Method

  1. Preheat your oven to 375°F.
  2. Rinse the rice in cold water and drain.
  3. In a large pot, bring the water, rice, and salt to a boil. Reduce the heat, cover, and simmer for 18-20 minutes or until the water has been absorbed.
  4. Meanwhile, in a large skillet, heat the oil over medium heat. Add the onion, bell peppers, garlic, thyme, black pepper, paprika, cumin, turmeric, cinnamon, and chili powder. Cook until the vegetables are tender, about 10 minutes.
  5. Add the coconut milk and chicken to the skillet, stirring to combine.
  6. Add the cooked rice to the skillet and stir to combine.
  7. Transfer the mixture to a greased 9-inch pie dish.
  8. In a small bowl, combine the bread crumbs, Parmesan cheese, and melted butter.
  9. Sprinkle the bread crumb mixture over the top of the rice mixture.
  10. Place the pie dish on a baking sheet and bake for 20-25 minutes or until the bread crumb topping is golden brown.
  11. Let the pie cool for 5-10 minutes before serving.
