Ingredients

  • 1 pound lean ground beef

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (8 ounces) tomato sauce
  • 1/2 cup water
  • 8 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Method

  1. Preheat oven to 375°F.
  2. In a large skillet over medium heat, cook the ground beef until browned.

  4. Add the black beans, tomato sauce, and water to the skillet. Stir to combine.
  5. Reduce heat to low and simmer for 10 minutes.
  6. Place a tortilla on a clean surface. Spoon 1/2 cup of the beef mixture onto the center of the tortilla. Sprinkle with 2 tablespoons of shredded cheddar cheese and a tablespoon of chopped cilantro.
  7. Roll up the tortilla around the filling and place seam-side down in a baking dish. Repeat with remaining tortillas and filling.
  8. Sprinkle the remaining cheese over the top of the burritos.
  9. Bake in preheated oven for 15-20 minutes or until cheese is melted and burritos are heated through.
  10. Serve with lime wedges and additional cilantro, if desired.

If you prefer a spicier burrito, you can add hot sauce or diced jalapeƱo peppers to the filling. You can also substitute the ground beef with ground turkey, chicken or pork.
