- 1 pound lean ground beef
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (8 ounces) tomato sauce
- 1/2 cup water
- 8 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges

Method
- Preheat oven to 375°F.
- In a large skillet over medium heat, cook the ground beef until browned.
- Add the onion, bell pepper, garlic, chili powder, cumin, salt, and black pepper to the skillet. Cook for 5 minutes or until vegetables are tender.
- Add the black beans, tomato sauce, and water to the skillet. Stir to combine.
- Reduce heat to low and simmer for 10 minutes.
- Place a tortilla on a clean surface. Spoon 1/2 cup of the beef mixture onto the center of the tortilla. Sprinkle with 2 tablespoons of shredded cheddar cheese and a tablespoon of chopped cilantro.
- Roll up the tortilla around the filling and place seam-side down in a baking dish. Repeat with remaining tortillas and filling.
- Sprinkle the remaining cheese over the top of the burritos.
- Bake in preheated oven for 15-20 minutes or until cheese is melted and burritos are heated through.
- Serve with lime wedges and additional cilantro, if desired.
Notes
