  • 2 1/2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 2 cups cooked shredded chicken

Method

  1. In a large saucepan, melt the butter and olive oil over medium heat. Add the onion and garlic and sauté until softened, about 2-3 minutes.

  3. Add the chicken broth, salt, pepper, paprika, thyme, oregano and garlic powder to the pan and stir to combine.
  4. Bring the mixture to a boil, then reduce the heat to low and cover the pan with a tight-fitting lid. Simmer until the rice and pasta are tender and most of the liquid has been absorbed, about 18-20 minutes.
  5. Remove the pan from the heat and stir in the cooked shredded chicken.
  6. Let the mixture sit for a few minutes to allow the flavors to meld together.
  7. Fluff the chicken rice with a fork and serve hot.

Notes

This recipe can easily be doubled or halved depending on how many people you are feeding. You can also substitute the chicken with ground beef or turkey if you prefer.
