Method

While the chicken is cooking, prepare the yellow rice. In a medium saucepan, heat 1 tbsp of olive oil over medium heat. Add the chopped onion and sauté until translucent. 7. Add the chicken broth, long-grain white rice, saffron threads, ground cumin, and salt to the saucepan. Stir to combine. 8. Bring the mixture to a boil, then reduce the heat to low and cover with a lid. Simmer for 20 minutes until the rice is fully cooked and fluffy. 9. Serve the chicken breasts and tomato sauce over a bed of yellow rice.
