- 1 kg chicken, cut into pieces
- 4 cups normal rice
- 2 onions, thinly sliced
- 4 tomatoes, diced
- 1 cup yogurt
- 4 tablespoons vegetable oil
- 2 tablespoons ghee (clarified butter)
- 2 tablespoons ginger paste
- 2 tablespoons garlic paste
- 2 teaspoons red chili powder
- 2 teaspoons coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala powder
- 2 bay leaves
- 4 green cardamom pods
- 4 cloves
- 2 cinnamon sticks
- Salt to taste
- 4 cups water
- Fried onions, for garnish
- Fresh coriander leaves, for garnish
Equipment
- Large pot or Dutch oven with lid
- Large frying pan
- Measuring cups and spoons
- Cutting board and knife

Method
- Wash the normal rice and soak it in water for 30 minutes.
- In a large pot or Dutch oven, heat the vegetable oil and ghee over medium heat.
- Add the sliced onions and fry until golden brown.
- Add the ginger and garlic paste and fry for 1-2 minutes.
- Add the chicken pieces and fry until browned on all sides.
- Add the diced tomatoes, red chili powder, coriander powder, turmeric powder, cumin powder, garam masala powder, bay leaves, green cardamom pods, cloves, cinnamon sticks, and salt to taste. Mix well and cook for 5-7 minutes.
- Add the yogurt and mix well. Cook for another 5-7 minutes.
- Drain the soaked rice and add it to the pot. Mix well.
- Add 4 cups of water and stir gently.
- Cover the pot with a lid and cook on low heat for 20-25 minutes or until the rice is cooked and the chicken is tender.
- Garnish the biryani with fried onions and fresh coriander leaves.
- Serve hot with raita (yogurt sauce) and salad.
Notes
- You can use any cut of chicken for this recipe, but bone-in chicken is recommended for more flavor.
- You can adjust the amount of spices according to your taste preferences.
