- 1 rotisserie chicken
- 1 cup uncooked white rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 carrots, peeled and sliced
- 4 celery stalks, sliced
- 8 cups chicken broth
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish

Method
- Remove the skin from the rotisserie chicken and shred the meat into bite-sized pieces.
- Rinse the rice under cold water and set aside.
- Heat the olive oil in a large soup pot over medium heat.
- Add the onion and garlic and sauté for 2-3 minutes until translucent.
- Add the carrots and celery and sauté for another 2-3 minutes.
- Add the chicken broth, bay leaves, and thyme to the pot and bring to a boil.

- Add the rice to the pot and continue to simmer for 20-25 minutes until the rice is cooked.
- Add the shredded chicken to the pot and simmer for another 5-10 minutes until heated through.
- Season with salt and pepper to taste.
- Remove the bay leaves and discard.
- Serve hot and garnish with fresh parsley.
