Ingredients

  • 1 1/2 cups of jasmine rice
  • 2 cups of chicken broth
  • 2 cloves of garlic, minced
  • 1 thumb-sized ginger, sliced
  • 1 1/2 lbs of chicken thighs, bone-in and skin-on
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of sesame oil
  • 1 tablespoon of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of fish sauce
  • 1 tablespoon of sugar
  • 1 cucumber, sliced
  • 1 bunch of scallions, chopped

  • A large pot
  • A frying pan

Method

  1. Rinse the rice in cold water until the water runs clear. Drain and set aside.
  2. In a large pot, add the chicken broth, garlic, and ginger. Bring to a boil.
  3. Add the rice to the pot and stir well. Cover with a lid and reduce the heat to low. Cook for 18 minutes.
  4. In a frying pan, heat the vegetable oil over medium-high heat. Add the chicken thighs, skin-side down, and cook for 5-7 minutes until golden brown. Flip the chicken and cook for another 5-7 minutes. Remove from the pan and set aside.
  5. In a small bowl, mix together the sesame oil, soy sauce, oyster sauce, fish sauce, and sugar.
  6. In the same frying pan, add the sauce mixture and heat over medium heat. Stir well and add the chicken thighs back to the pan. Coat the chicken with the sauce and cook for 2-3 minutes until the sauce thickens.
  7. Remove the chicken from the pan and let it rest for 5 minutes. Slice the chicken into bite-sized pieces.
  8. Fluff the rice with a fork and transfer it to a serving dish. Top with sliced cucumber and scallions.
  9. Arrange the chicken on top of the rice and serve hot.
