Ingredients

  • 1 kg chicken pieces
  • 3 cups basmati rice

  • 1 tsp coriander seeds
  • 5-6 black peppercorns
  • 5-6 cloves
  • 2-3 bay leaves
  • 1 cinnamon stick
  • 4-5 cardamom pods
  • 1 tsp salt
  • 4-5 tbsp cooking oil
  • 4 cups water

Method

  1. Wash the rice in cold water and soak for 30 minutes.
  2. Heat oil in a large pot over medium heat. Add sliced onions and fry until golden brown.
  3. Add chicken pieces, ginger paste, garlic paste, green chilies, and all the spices. Fry for 5-6 minutes, stirring occasionally.
  4. Add 4 cups of water and bring to a boil. Reduce heat, cover the pot, and let the chicken cook for 20-25 minutes or until tender.
  5. Remove the chicken pieces from the pot and set aside. Strain the chicken stock and reserve.
  6. In a separate pot, boil 6 cups of water. Add the soaked rice and cook for 5-7 minutes or until partially cooked. Drain the rice.
  7. Add the partially cooked rice to the pot with the chicken stock. Stir in 1 tsp salt and mix well.
  8. Add the chicken pieces on top of the rice. Cover the pot and cook over low heat for 10-15 minutes or until the rice is fully cooked.
  9. Turn off the heat and let the chicken rice sit for 5-10 minutes before serving.
  10. Garnish with fresh cilantro and sliced tomatoes, if desired.

Notes

  • For a richer flavor, you can use chicken broth instead of water.
  • You can also add vegetables like carrots and peas to the rice for extra nutrition.
  • Make sure to soak the rice for at least 30 minutes before cooking to ensure it cooks evenly.
