- 1 kg chicken pieces
- 3 cups basmati rice

- 2-3 green chilies, sliced
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 5-6 black peppercorns
- 5-6 cloves
- 2-3 bay leaves
- 1 cinnamon stick
- 4-5 cardamom pods
- 1 tsp salt
- 4-5 tbsp cooking oil
- 4 cups water

Method
- Wash the rice in cold water and soak for 30 minutes.
- Heat oil in a large pot over medium heat. Add sliced onions and fry until golden brown.
- Add chicken pieces, ginger paste, garlic paste, green chilies, and all the spices. Fry for 5-6 minutes, stirring occasionally.
- Add 4 cups of water and bring to a boil. Reduce heat, cover the pot, and let the chicken cook for 20-25 minutes or until tender.
- Remove the chicken pieces from the pot and set aside. Strain the chicken stock and reserve.
- In a separate pot, boil 6 cups of water. Add the soaked rice and cook for 5-7 minutes or until partially cooked. Drain the rice.
- Add the partially cooked rice to the pot with the chicken stock. Stir in 1 tsp salt and mix well.
- Add the chicken pieces on top of the rice. Cover the pot and cook over low heat for 10-15 minutes or until the rice is fully cooked.
- Turn off the heat and let the chicken rice sit for 5-10 minutes before serving.
- Garnish with fresh cilantro and sliced tomatoes, if desired.

- For a richer flavor, you can use chicken broth instead of water.
