Ingredients

  • 2 cups of rice
  • 2 chicken breasts, cut into small pieces

  • 1 tablespoon of chilli powder
  • 2 teaspoons of cumin powder
  • 2 teaspoons of coriander powder

  • 1 teaspoon of black pepper
  • 4 cups of water
  • 2 tablespoons of vegetable oil

  • A frying pan

Method

  1. Start by washing the rice and soaking it in water for 10 minutes.
  2. Heat the frying pan on medium heat with 1 tablespoon of vegetable oil. Add the chicken and cook for 5 minutes until golden brown. Remove from the pan and set aside.
  3. In the same pan, add 1 tablespoon of vegetable oil and sauté the onions until they turn translucent.
  4. Add garlic, ginger, chilli powder, cumin powder, coriander powder, salt, and black pepper. Cook for 1 minute.
  5. Now, add diced tomatoes, kidney beans, and cooked chicken. Cook for 5 minutes.
  6. In the large pot, add 4 cups of water and bring to a boil. Drain the water from the soaked rice and add the rice to the pot. Stir well and cover the pot with a lid. Cook for 20 minutes on low heat.
  7. Add the chicken and bean mixture to the rice pot and stir well. Cover the pot again and cook for 10 minutes.
  8. Turn off the heat and let the pot sit for 5 minutes. Serve hot.

Notes

This recipe can be made spicier by adding more chilli powder or by adding fresh chillies. You can also add vegetables of your choice, such as bell peppers or carrots, to make it even more nutritious.
