Ingredients

  • 1-2 bay leaves
  • 4-5 cloves
  • 2-3 cinnamon sticks
  • 1 teaspoon cumin seeds
  • 1 teaspoon black pepper
  • 1 teaspoon cardamom seeds
  • 1 teaspoon fennel seeds
  • 1 tablespoon mint leaves
  • 1 tablespoon coriander leaves

Equipment

Method

  1. Wash and soak the rice in water for 30 minutes.
  2. Heat oil in a large pot or Dutch oven over medium heat.
  3. Add bay leaves, cloves, cinnamon sticks, cumin seeds, black pepper, cardamom seeds, and fennel seeds to the pot.
  4. Sauté for a few seconds and then add the chopped onions.

  10. Add water to the pot and bring it to a boil.
  11. Drain the soaked rice and add it to the pot.
  12. Add green chillies, mint leaves, and coriander leaves to the pot.
  13. Stir and cover the pot with a lid.
  14. Cook on low heat for 20-25 minutes, or until the rice is cooked and the water has evaporated.
  15. Remove from heat and let it rest for 5-10 minutes.
  16. Fluff the rice with a fork and serve hot.
