- 1 tablespoon cornstarch dissolved in 1/4 cup water
- Salt to taste
- 2 cups cooked rice
- Fresh coriander leaves for garnishing

Method
- In a small bowl, mix together ginger paste, garlic paste, soy sauce, vinegar, red chili powder, and cornstarch. Add the chicken to the mixture and marinate for 10-15 minutes.
- In a wok or a deep frying pan, heat 2 tablespoons of oil over high heat. Add the marinated chicken and stir-fry for 7-8 minutes or until the chicken is cooked through.
- Remove the chicken from the wok and set aside.
- In the same wok, add chopped onions and capsicum and stir-fry for 2-3 minutes.
- Add chopped spring onions and stir-fry for an additional 1-2 minutes.
- Add tomato ketchup, red chili sauce, and salt to taste. Mix well.
- Add the cooked chicken to the wok and mix well with the vegetables.
- Add the cornstarch dissolved in water to the wok and mix well. Cook for 2-3 minutes or until the sauce thickens.
- Remove from heat and garnish with fresh coriander leaves.
- Serve hot with cooked rice.
