Ingredients

  • 1 cup of basmati rice
  • 1 onion, chopped
  • 1 capsicum, chopped
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 2 green chilies, chopped
  • 1 tsp ginger garlic paste
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp turmeric powder
  • Salt to taste

Equipment

  • Heavy bottomed pan with a lid
  • Knife
  • Cutting board
  • Spatula

Method

  1. Rinse the basmati rice and soak it in water for 30 minutes. Drain the water and keep the rice aside.
  2. Heat oil in a heavy-bottomed pan and add cumin seeds, mustard seeds, urad dal, and chana dal. Fry them for a few seconds till they turn golden brown.
  3. Add chopped onions, green chilies, and ginger garlic paste. Saute them till the onions turn translucent.
  4. Add chopped capsicum and saute for a couple of minutes till they are slightly cooked.
  5. Add coriander powder, cumin powder, turmeric powder, and salt. Mix well and saute for a minute.
  6. Add the soaked rice and saute for a minute till the rice is coated well with the spices.
  7. Add 2 cups of water and bring it to a boil. Reduce the flame to low and cover the pan with a lid.
  8. Cook for 10-15 minutes till the rice is cooked and all the water is absorbed.
  9. Switch off the flame and let the rice rest for 5 minutes.
  10. Fluff the rice with a fork and serve hot with raita or any other side dish of your choice.

Notes

  • You can also add vegetables like carrots, peas, and beans to make it more nutritious.
  • If you want a spicier version of capsicum rice, you can add more green chilies.
  • Make sure the rice is soaked well for at least 30 minutes to get fluffy rice.
