- 4 boneless, skinless chicken breasts
- 1 tablespoon vegetable oil
- 2 cups cooked rice
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumber
- 1/2 cup sliced red bell pepper
- 1/4 cup sliced green onions
- 2 tablespoons sesame seeds

Method
1. In a mixing bowl, whisk together the soy sauce, mirin, honey, brown sugar, sesame oil, ginger, and garlic. 2. Place the chicken breasts into a gallon-sized zip-top bag and pour the marinade over them. Seal the bag and massage the chicken so that it is completely coated in the marinade. 3. Refrigerate the chicken for at least 30 minutes, or up to 8 hours. 4. Heat the vegetable oil in a large skillet over medium-high heat. 5. Remove the chicken from the marinade, reserving the marinade, and add it to the skillet. Cook for 6-7 minutes per side, or until the chicken is cooked through. 6. Remove the chicken from the skillet and let it rest for 5 minutes. 7. Pour the reserved marinade into the skillet and bring it to a boil. Reduce the heat to medium and let the sauce simmer for 5-7 minutes, or until it has thickened. 8. While the sauce is simmering, assemble the rice bowls. Divide the cooked rice between four serving bowls and top it with the shredded carrots, sliced cucumber, sliced red bell pepper, and sliced green onions. 9. Slice the chicken and place it over the rice and vegetables. 10. Once the sauce has thickened, pour it over the chicken. 11.
