- 4 ounces of smoked salmon, sliced
- 1 tablespoon sesame seeds

Method
- Begin by ricing the cauliflower. You can do this by either grating it or pulsing it in a food processor until it resembles rice.
- In a bowl, mix together the rice vinegar, sugar, and salt until the sugar has dissolved.
- Add the cauliflower rice to the bowl and mix it together with the vinegar mixture until it is well combined.
- Place a sheet of nori on top of the bamboo sushi mat with the shiny side facing down.
- Scoop about ½ cup of cauliflower rice onto the nori and spread it out evenly, leaving a 1-inch border at the top.
- Add a few slices of avocado, carrot, cucumber, and smoked salmon on top of the rice.
- Using the bamboo mat, tightly roll the sushi from the bottom, pressing down as you roll to make sure it is tight and compact.
- Repeat this process with the remaining nori sheets and ingredients.
- Sprinkle sesame seeds on top of the sushi rolls.
- Using a sharp knife, slice the sushi into 1-inch pieces and serve.
