Method

  1. Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
  2. Heat the olive oil in a large skillet over medium-high heat.

  4. Add the red and green bell peppers and sauté for another 2-3 minutes.
  5. Add the shrimp to the skillet and cook for 3-4 minutes until pink.
