For the chicken:- 1 pound boneless chicken, cut into small pieces
- 1 egg
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 cup oil for frying
- 1 tablespoon oil
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 green chilies, chopped
- 1 tablespoon soy sauce
- 1 tablespoon chili sauce
- 1 tablespoon vinegar
- 1 tablespoon cornstarch
- 1/2 cup chicken broth
- 1 teaspoon sugar
- Salt to taste
- 2 cups basmati rice
- 4 cups water
- 1 teaspoon salt

Method
1. Rinse the rice in cold water and soak it for 30 minutes. 2. In a bowl, whisk together the egg, soy sauce, cornstarch, black pepper, and salt. Add the chicken pieces and mix well. 3. Heat the oil in a wok or frying pan over medium-high heat. Once the oil is hot, add the chicken pieces and fry until golden brown and crispy. Remove and set aside. 4. In the same wok or frying pan, add a tablespoon of oil. Add minced garlic and ginger and sauté for a few seconds. 5. Add chopped onion, bell pepper, and green chilies. Sauté until the vegetables are tender. 6. Mix together soy sauce, chili sauce, vinegar, cornstarch, chicken broth, sugar, and salt. Pour this sauce over the vegetables and bring to a boil. 7. Add the fried chicken pieces to the sauce and toss until the chicken is coated evenly. 8. In a large pot, bring 4 cups of water to a boil. Add the presoaked rice and salt. Let it cook until the rice is tender and fluffy. 9. Serve the Chicken Manchurian on a bed of hot steamed rice.Notes
